Muffins

Muffins are an ideal baked good because they’re quick, easy, freeze well, and are always crowd-pleasing.

When we’re craving a decadent breakfast like pancakes or French toast, but are short on time in the morning, there’s nothing better than a muffin. We say it a lot, but it’s true—homemade muffins are WAY better than anything store-bought or from your corner cafe (and not just because they don’t cost $$$ and there’s less risk of them being stale). We’ve got a ton of flavor varieties in this list, including savory ones, and even a few muffin tray hacks (since you got it, use it!). Check out our 35 muffin recipes for ideas—you won’t have any excuse to skip breakfast again.

We think there are a couple different camps you might fall into when it comes to muffin flavors. There’s the chocolate-y options, often so decadent they’re as close as you can get to cake for breakfast, like our chocolate chip muffins, keto double chocolate muffins, or our mini pumpkin chocolate chip muffins. Speaking of pumpkin, we’re suckers for an autumnal-inspired muffin year-round, like our apple cinnamon muffins, pumpkin spice muffins, or our gingerbread muffins with maple-cinnamon glaze. We’re also always down for a muffin studded with fresh fruit, like our strawberry muffins, blueberry muffins (including a keto version!), lemon poppyseed muffins, or ourPB&J banana bread muffins.

A lot of these muffins are effectively just bald cupcakes in disguise, but thanks to some easy ingredient swaps, you CAN turn a muffin into a healthy breakfast too. Our healthy pumpkin muffins swap in honey and whole-wheat flour for all-purpose flour and sugar, our blueberry yogurt mini muffins sub in low-fat Greek yogurt, and our brown butter bran muffins pair extra nutritious wheat bran with whole-wheat flour to add fiber to keep you full all morning.

And we can’t forget savory muffins! Craving eggs for breakfast, but no time for that perfect fry or scramble? Egg muffins to the rescue. You can make a big batch full of your favorite ingredients, and have an easy breakfast ready to go all week. Still want those carbs? Try our rebel within muffins—they’re a herby, savory muffin with a whole soft-boiled egg inside.

You can even use your muffin tins to turn some of your favorite dinners into portable, hand-held options, like in our muffin tin mac & cheese or our deep dish pizza muffins. They’re great for an afternoon snack or dinner on the go.
